I don’t know what to call this burger, it has so many ingredients. Beetroot and wasabi burger? But it has kale and pomegranate seeds lol. The Sakura? The Plum Blossom? Anzuhana?? Idek guys but it’s delicious 😂
For the sake of description lets settle on Wasabi and Pomegranate Burger with Kale Slaw. (: THE STATS

The protein, iron and calcium I’m not getting from meat? Some of each! Kale is a great plant source of absorbable calcium as well as some iron, the leafy greens and herbs are iron-rich, and there’s a little protein in everything but especially the wasabi mayo which is almost entirely made of silken tofu. You’re also getting a massive serve of diverse vegetables here.
4 soft fluffy buns – make sure they don’t contain butter or milk of course
1 medium sweet potato, peeled
1 large beetroot, peeled
3 heaped tbsp coconut or soy yoghurt
1/2 cup plain flour or cornflour
Several handfuls kale, washed
1 large carrot, peeled and grated
2 tbsp fresh chopped parsley
2 tbsp fresh chopped coriander
4 tbsp pomegranate seeds
Vegan wasabi mayo (easy recipe 3 posts back!)
Salt and pepper
Extra flour, for dusting
Preheat oven to 180*C.
Grate sweet potato and beetroot and squeeze out excess liquid. Place in a large bowl and stir in flour, coconut yoghurt and a crack each of salt and pepper.
Take a handful of beetroot mixture and form into a patty. Coat in flour and set aside. Repeat until all the beetroot mixture is gone and you’ve made 8 or so patties.
Halve buns and place in the oven for 5-8 minutes to toast.
Cook the patties by either deep-frying them at 180*C for 2 minutes or until crispy, OR drizzling oil such as olive oil in a frying pan until 1cm deep and then shallow-frying them, flipping frequently, for 10 minutes or until crispy. Drain well on paper towel.
Once buns are toasted, remove from oven. Spread bottom bun with wasabi mayo, top with pomegranate seeds, add beetroot patty, add a handful of kale, then sprinkle with carrot, coriander and parsley. Repeat this again for a double layered burger and enjoy!
