Chargrilled Vegetable Skewers

These are so yum. I thought I’d be able to eat 4 – wrong. Two filled me up to the max.

Approximate cost to buy everything $15 – way cheaper if you already have pantry essentials like spices. Takes 10 minutes to cook plus 10 mins prep and some marinating time. Makes 4 skewers. A heap of vitamins, but not much protein, iron and calcium – the chipotle sauce does contain some but you’ll need to serve this with some extra things like seared tofu, edamame, wilted spinach, a chickpea/lentil salad or main dish, or some more toasted nuts to boost that!



Vegetables, all sliced into bite-size chunks:

1 red capsicum
1 large zucchini
1 large brown onion
3 large tomatoes


1/4 cup extra virgin olive oil
1 tbsp ground paprika
1 tsp ground cumin
Chopped fresh coriander
Sprinkle salt and pepper

To serve:

Chipotle sauce (see recipe 2 posts back)
Fresh coriander
Fresh lime
Flaked almonds



Combine marinade ingredients. Pop your chopped vegetables onto skewers and place on a tray. Brush with marinade and set aside for at least 30 minutes.

Grill skewers over high heat for 10 minutes, turning regularly, until charred and cooked. Serve immediately šŸ™‚
