Creamy Chipotle Sauce

The batch of this that I made was absolutely massive, so I’ve halved the recipe. It is zingy but creamy and full of awesomeness!

Makes 1 cup. $12 if you have to buy everything. A fair source of protein, and a little iron and calcium. Takes 5 minutes plus cashew soaking time.



1/2 cup raw cashews
Juice of two limes
2 tbsp ground paprika – I used sweet but you could try smoked, or a mixture of both
2 tbsp chopped fresh coriander
1 tbsp ground cumin
1 tsp salt
1 tsp sugar
1/2 tsp cayenne pepper, or more to taste
*if you want to be legit, add a chipotle chilli

Soak cashews in hot water for at least 30 minutes (preferably overnight). Drain well, discarding water.

Combine all ingredients and blend in a blender or food processor until very smooth, adding a splash of water or plant-based milk if you’d like it thinner.

Store in an airtight container for up to 5 days, and drizzle over whatever you like – it’s great on burritos, nachos and grilled veg.
