It’s July! That means I’ve been doing vegan Mondays for 6 MONTHS! Woohoo! Never had a new years resolution go this well :’) to celebrate here’s a recipe for the BEST VEGAN MASHED POTATO 😍😍 for those for whom potato is life. There are 3 key ingredients in a really really creamy mash… -fat
-a potato ricer or fine sieve
and potatoes, obvs. It’s not overly healthy but I feel like we don’t have enough luxurious vegan foods.
Ingredients (this makes about 4 serves) ✔1kg starchy potatoes, peeled and halved
✔2 heaped tbsp vegetable shortening – palm-free please
✔3 tbsp full-fat unsweetened plant milk (I almost always use soy)
✔Salt, to taste
✔Chopped parsley, toasted pine nuts, drizzle of olive oil, or none of the above, to garnish 😉 Method
Boil your peeled and halved potatoes for 15 mins or as long as they take to get very, very tender. Drain them well, making sure all excess water from potatoes and saucepan is gone, and then return them to the saucepan.
At this point, grind them through a potato ricer then stir through all other ingredients – or, add vegetable shortening and milk and then smash everything up with a potato masher or fork before passing it through a fine metal sieve to get it really really smooth and lump-free.
Season with salt until as tasty as you want it (about 1-2 tsp) then serve 🙂 I’m posting a gorgeous hearty veg stew to go with this next seeing as it’s the dead of winter for us (we literally just had the coldest winter night in like 40 years) so stay tuned friends.
