Fluffy Vegan Pancakes

Here, have a pancake recipe. These taste just like regular, fluffy dairy pancakes. Actually, to be specific they taste just about the same and have the same texture as McDonalds hotcakes. Which are f%&@ing delicious. Cuuuurious.


Approximate cost to buy everything: $10

Will make: 8 fluffy pancakes

Time taken: 20 minutes

The protein, iron and calcium I’m not getting from meat? Not a lot of iron, but a fair whack of calcium and some protein.


2 cups soy milk
2 tbsp caster sugar
1 tsp vanilla essence
2 cups self-raising flour*
2 tbsp dairy-free yoghurt (I used Nudie’s coconut yoghurt)


Combine all ingredients and whisk together well. Cook in batches on medium-high heat in a greased frying pan, flipping over when holes appear, and keep finished pancakes warm in an oven on low heat.

Serve with maple syrup and some whipped sweetened coconut yoghurt. *If you’d like to make crepes instead, use plain flour instead of self-raising and very thinly spread the mixture in the pan.
