French Toast

So this is a breakthrough and I loved it. I’ve been using 1 tbsp coconut yoghurt + 1 tsp cornflour + 1/2 tsp baking soda for an egg substitute for a few months and after this I have to say I’m pretty convinced it’s the bomb. This just tastes the same as normal French toast. I might make a savoury version soon too… spinach and vegan ricotta anyone? 😉

Will serve: 1 person – multiply ingredients to make as much as you want

Time taken: 20 minutes from setup to table

The protein, iron and calcium I’m not getting from meat? A little bit, actually! I used a really calcium-rich almond milk for this which was great, and you can easily pop some protein powder in if you want.

 


 

Ingredients

Toast:

2 thick slices of good-quality bread
2 tbsp coconut yoghurt mixed with 2 tsp cornflour and 1 tsp baking soda
1/2 cup plant milk (I used almond)
1 tsp vanilla essence or vanilla bean paste
1 tbsp caster sugar

Strawberry coulis:

6 or so strawberries, hulled and halved
1 tbsp caster sugar
2 tbsp water

To serve:

Dairy-free ice cream (I used @sogoodau)
Fresh strawberries
Fresh mint
Drizzle maple syrup
Slivered almonds

 

Method

Combine all wet toast ingredients together and stir until smooth. Dip pieces of bread in to submerge, leave until very wet, then set aside.

In a small saucepan, combine all coulis ingredients. Bring to the boil then remove from heat and mash the strawberries to form a thin sauce. Set aside.

Heat some oil in a frying pan over high heat. Add soaked bread then reduce heat to medium-high. Fry for 5 minutes, flipping occasionally, until golden.

Serve toast drizzled with coulis and maple syrup, topped with ice cream, strawberries, mint and almonds. Yum 😀
