Muesli

If you’re looking for a healthy breakfast, this is it. Complex carbs, tonnes of fibre, healthy oils and fruit 😁 Best served with yoghurt and fresh fruit, I’m currently eating mine (literally the bottom left bowl from this shoot) with @nudiejuice‘s strawberry and watermelon coyo this morning and it is d e l i g h t f u l.

Approx. cost $25 if you have to buy a new pack of absolutely everything. Makes about 4 cups of muesli. Takes 30 mins including prep time. And contains a good serve each of vegan protein, iron and calcium, boosted even more if you do add the cacao, protein and spirulina 🙂


Ingredients

1 cup oats
1/2 cup bran
1/2 cup dried fruit (I used figs)
1/4 cup almonds, roughly chopped
1/4 cup walnuts, roughly chopped
1/4 cup chia
1/4 cup shredded coconut
1/4 cup pepitas
2 tbsp cacao nibs
2 tsp ground cinnamon

Optional, but great extras:

2 tbsp cacao powder
2 tbsp vegan protein powder
1 tbsp spirulina

Method

Preheat oven to 180*C.

Combine all grains, seeds, nuts and cinnamon. Place on a baking tray and toast in the oven, stirring around occasionally, for 5-10 minutes or until toasted and golden.

Remove from oven and let cool before combining with dried fruit and extra powders.

Store in an airtight container for months!
