My first crack at “nice cream” (ice cream made with blitzed frozen bananas instead of dairy) and it was really nice, not icy at all! I made it to match the vegan banana butterscotch pudding one post back.
Approximate cost to buy everything: $10 with leftovers
Will make: Approx. 400ml
Time taken: Approximately 5 hours, most of which is setting time
The protein, iron and calcium I’m not getting from meat? No, but some nice potassium from those bananas, which is pretty good for ice cream!
2 frozen bananas (ideally, peel before freezing for an easier time)
2 tbsp golden syrup
2 tbsp chopped mixed nuts (I used whatever I had on hand – macadamias, cashews, almonds, walnuts)
1/2 tsp cinnamon
Remove frozen bananas from freezer and put into a blender or food processor with golden syrup and cinnamon. Blitz until incredibly smooth and silky, then stir through nuts.
Pour mixture into a 400ml-capacity container and refreeze for 4 hours. Scoop out with an ice cream spoon and serve when ready to eat.
