Orange & Polenta Cake

Happy birthday to me! As promised here’s an orange and polenta cake ❤❤ it worked really well!



125g coconut oil, softened
100g caster sugar
2/3 cup coconut yoghurt
100g polenta
1 cup almond meal
1 cup SR flour
1 cup plant milk
1 tsp baking powder
1 tbsp orange zest
1 tsp orange blossom water
1 tsp vanilla essence

Orange syrup:

1 cup orange juice
125g caster sugar
2 tbsp orange blossom water
10 cardamom pods, crushed
1 tbsp rosewater


Preheat oven to 160*C and grease a 25cm circle cake tin.

Combine coconut oil and caster sugar in a bowl and whisk together until well-combined. Add coconut yoghurt, orange zest, orange blossom water and milk, then sift in flours, polenta and baking powder.

Spoon batter into tin and smooth out. Place in the oven and cook for 1 hour and 20 minutes or until nicely browned and cooked through.

In the meantime, make the syrup by combining ingredients and heating over medium heat, stirring occasionally, for 10 minutes or until reduced and syrupy. Leave to cool.

Remove cake from oven and carefully turn onto a wire rack. Let cool, then poke holes in it with a skewer and pour syrup over. Serve with coconut yoghurt, fresh orange and raspberries! It’s also gorgeous heated!
