These are awesome little vegan AND gluten free sweet potato rosti. Full of the most insanely bright colour and super delicious! Have them on their own or with crusty bread and avocado.

The protein, iron and calcium I’m not getting from meat? Sadly, no. Plenty of other nutrients like Vitamin A for healthy eyes, but if you’re looking for a meat-replacing boost, serve these with some sides like leafy greens (spinach and kale), sauteed tofu or toasted nuts, or some hummus with a good hit of calcium-rich sesame tahini 😊
1 clove garlic, diced
1 large sweet potato, peeled
2 tbsp non-dairy yoghurt
2 tbsp cornflour
1 tsp baking powder
Salt and pepper, to taste
Combine all ingredients in a bowl and stir well to combine.
Drop heaped tablespoons of mixture into hot oil in a frying pan, and shallow-fry over medium-high heat until golden and crispy. Drain on paper towel and serve.
