I’m at a Kris Kringle party right now and I brought these beautiful Pina Colada popsicles! They’re easy, delicious, vegan and festive. If you’re in the southern hemisphere, enjoy these during your hot summery holidays – and if you’re up north, maybe make them anyway? Hahah. I’ll post some comforting warm Christmas goodies soon too.
1 cup coconut cream
1 cup pineapple juice
1 cup Malibu rum (equiv. about 8 shots)
Combine all ingredients, muddle raspberries slightly to spread a swirl of pink through, and pour into 8 popsicle moulds. Freeze for a few hours, then pop a stick in them when they’re slightly solid. Then keep freezing overnight, until they’re totally set!
