5 simple ingredients make the most impressive cookies which are perfect for your new year’s party! The hardest bit is folding them whilst still hot, but they’re so rewarding when done and practice makes perfect!
Makes 15-20 cookies.
1/2 can aquafaba
1/4 cup caster sugar
1 tsp vanilla essence
1/3 cup plain flour
Several drops almond essence, to taste
Preheat oven to 200*C. Prepare a bunch of fortunes on small strips of paper, about 1cm x 4cm. Fold fortunes in half.
Whip aquafaba in an electric mixer until foamy, then add caster sugar gradually. Stop before the mixture forms peaks – you don’t want it to be stiff. Mix in vanilla and almond extract. Sift flour into mixture and stir well until combined.
On a baking sheet, draw 3 x 10cm circles. Pop a heaped teaspoon of batter in each circle and spread evenly, then pop in the oven and bake for 5 minutes or until the edges are browning.
Remove cookies from oven and immediately place fortunes on top. Fold each cookie in half, forming a semicircle, then bend the back behind itself using the rim of a cup until it forms a fortune cookie shape. Set aside to cool, then repeat with the other cookies – you need to work really quickly or they’ll set! Be careful of burnt fingers!
Repeat this process with the rest of the batter until you have 15-20 fortune cookies. It’s really important to only do about 3 at a time so that they don’t go hard before you told them. 🙂 I also like to pop all the finished cookies back in on a much lower temp (150*-160*) for an extra 10 minutes afterwards for that ultra crispiness.
