Steamed Greens with Olive Oil and Walnuts

One of the most common side dishes in my house – dressed steamed greens 😊

Approximate cost: $6

Serves: 4 as a side

Time taken: 10 minutes

Nutrition: a small serve of plant-based protein, plenty of dietary fibre and a plethora of vitamins, especially Vitamin C. The walnuts and olive oil are also full of healthy monounsaturated fats which are great for your heart and brain.


 

Ingredients

200g green beans

1 bunch baby broccoli

Large handful walnuts or almonds

1/4 cup extra virgin olive oil

Salt and black pepper, to taste

 

Method

Wash beans and broccoli and trim ends. Place in a steamer basket or microwave steamer, and steam for 5-7 minutes or until as tender as you like! Drain them, drizzle with olive oil, top with nuts and season with salt and cracked pepper.

We also like to put feta on them on non-vegan days, but homemade almond feta would work well too. You can also add chilli, lemon, or whatever you like 😍😍 such an easy way to get a serve of healthy green vegetables in! And such a good healthy meal for a snot princess like myself at the moment 😂 If you toast your nuts first, too (just in the oven for 3-5 minutes at 180*C works really well) then that will add some extra depth and warmth. ❤
