These are so yum! I always grab a cone full of warm, freshly-roasted ones at Floriade every year, but didn’t realise how easy they were to make at home! It costs about as much as whatever nuts you use and takes all of 15 minutes 😁😁 Just try not to eat them all in one go!!!
2 cups whole, raw nuts of choice (I used macadamias)
1.5 cups icing sugar
1/4 cup water
1 tablespoon ground cinnamon
Preheat oven to 180*C.
In a bowl, combine icing sugar, cinnamon and water and stir to combine into a very thick, stodgy paste (add more water if needed). Stir nuts through paste until coated, then place coated nuts on an oven tray, spaced slightly apart.
Bake for 10 minutes or until sugar has caramelised. You can turn the temp up to 190* for an extra few minutes if you’d like them more golden brown, just watch that they don’t burn.
Remove nuts from oven, leave to cool slightly and then break apart using a chisel or fingers. Eat warm from the oven or store in an airtight container for months.
