Tabouleh

Who likes tabouleh?? I’m a biiiiig fan 😍😍😍 so refreshing and full of nutrients but the wheat makes it nice and substantial, too. I also added some pomegranate seeds just for the lols.

Approximate cost to buy everything: $13

Makes – a big bowl of tabouleh – about 6 cups

Time taken: 10 minutes

The protein, iron and calcium I’m not getting from meat? A fair serve of iron from the high green leafy herb ratio, plus vitamin C in the lemon juice to boost absorption.


Ingredients

1/2 cup burghul (aka bulghur – cracked wheat – alternatively use couscous and prepare it the same)
1 large bunch parsley, finely chopped
1 small bunch mint, finely chopped
4 medium tomatoes, diced
1 red onion, finely diced
2 tbsp extra virgin olive oil
Juice of one lemon
Salt and pepper, to season

Method

Place burghul in a large bowl and cover with water until submerged. Cover bowl with foil or a plate and leave for 5 minutes or until burghul soaks water up. Fluff up with a fork.

Combine all ingredients and stir together in a large bowl. Serve as a side or on its own as a hearty salad!
